Stuffed Peppers

(serves 2)

  • 2 red peppers, deseeded and top sliced off
  • 60g rice, uncooked or 120g rice, cooked
  • 2 spring onions, chopped
  • 8 black olives, chopped
  • small handful walnuts
  • 100g crumbled feta cheese
  • 4 unsulphured apricots, chopped (optional)
  • 1 dessertspoon of pesto

This is so easy. Just rub olive oil on the peppers. Roast them for approx 30 mins on 180c until almost cooked.

Cook the rice at the same time. Mix cooked rice with all other ingredients, pack into the peppers and roast for another 30 mins.

Enjoy with side salad or veg.
